Salmon ala Karina

This salmon recipe is pretty much a no-brainer.  It's easy and it looks impressive. You will need a bunch of fresh basil and some tomatoes.

First you squeeze some lemon on the salmon and add some sea salt and pepper. Set aside. Then you put your tomatoes (3-4) in boiling water for a minute or so for easy peeling. Once peeled, cut in quarters and pulse in the food processor with the basil you cut in pieces. Do not puree; you want some chunks of tomatoes.  Heat this and add a some salt to taste.

Broil the salmon fillets for about 6 minutes.  Transfer into a plate and spoon some of the tomato-basil dressing on top.  Voila! You've got Salmon ala Karina. Serve with rice, potato, pasta or salad.  Enjoy.....
